November is National Peanut Butter Lovers Month! And, all of my family and my friends know how much I love peanut butter. Peanut butter toast is my go-to snack and PBJ’s are still my favorite sandwich. Every year for many years, a co-worker would make a Peanut Butter Texas Sheet Cake to celebrate my birthday. The month of November brings the thought of warm, comforting food now that the days are dark and cold. What’s more comforting than the aroma of mom’s meatloaf bubbling in the oven on a November day? I use the same recipe my mother used while I was growing up. I like to serve meatloaf with fluffy mashed potatoes, steamed green beans, applesauce and a warm roll. October 8 is National Pierogi Day! Pierogi are dumplings made up of unleavened dough stuffed with a variety of savory fillings. The pierogi, are boiled, then baked or fried in butter. Some of the filling combinations include: mashed potato, potato and cheese, potato and onion, cheese, cabbage, sauerkraut, ground meat, mushroom, spinach or fruit.
It may possibly be the best day for food. It’s National Taco Day so make sure to partake in the world’s greatest morsel. The origin of the taco is a mystery. Many claim that the taco was given to man by the Gods themselves as a reward for good behavior and for throwing some pretty sweet fiestas. Others believe that the taco is and always was a part of the life, universe and everything and always will be – it is both omni-present and eternal.

Coffee lovers not only take the time to enjoy their favorite brand of coffee, there are also many businesses that offer discounted or free cups of coffee to their customers.
Summer is coming to an end and one of my favorite things to do at this time of year is make End of Summer Vegetable Beef Soup. I make one last trip to the farmers’ market or to a local farm stand where the last of the summer’s vegetables are still abundant. This soup, which is my own recipe, can be made with or without meat. I like to use Black Angus beef stew meat but you can substitute the beef with Cannoli beans and the beef stock with vegetable stock!
