Fresh Food Friday What to do with all of those Thanksgiving leftovers

The question is — what will I do with all of those Thanksgiving leftovers? I always make turkey soup, turkey pot pies and turkey sandwiches so I have been searching for something a little different to make. My mother used to always make fried potato cakes from the leftover mashed potatoes. I found this recipe from Taste of Home for stuffing/mashed potato cakes that sounds yummy!

Crispy Mashed Potato & Stuffing Patties

Ingredients

  • 2 eggs, lightly beaten
  • 2 T. finely chopped onion
  • 1/4 t. pepper
  • 2 c. leftover mashed potatoes
  • 2 c. leftover chopped cooked turkey
  • 2 c. leftover stuffing
  • 2 T. butter
  • 2 T. Canola oil

Directions

In a large bowl, whisk eggs, onion and pepper. Stir in potatoes, turkey and stuffing.

In a large skillet, heat butter and oil over medium-high heat. Working in batches, drop potato mixture (half cup) into skillet; press to flatten slightly. Fry on each side until golden brown and heated through, 4-5 minutes. (Note: If the patties are too crumbly to hold together when frying, add a little flour to the mixture). Drain on paper towels. If desired, top with leftover gravy or serve with applesauce.
