These last few hot and humid late spring days, have me wanting to make light and refreshing meals for dinner. When it’s too hot to cook in the kitchen, I will throw marinated chicken breasts, sirloin steaks or pork chops on the charcoal grill. I like to serve it with this easy Broccoli Salad made from a recipe my mother gave me. It’s best to make it the night before so all the flavors have a chance to soak in.
Mom’s Broccoli Salad
- 1 bunch broccoli (chopped raw)
- 1 red onion (chopped)
- 16 ozs. bacon (cooked and chopped)
Dressing
- 1 c. mayonnaise
- 1/4 c. sugar
- 2 T. vinegar
Mix the broccoli, onion and bacon together in a large bowl. Whisk the mayonnaise, sugar and vinegar together in a small bowl, then toss it over the broccoli mixture. I sometime use cauliflower and broccoli in the mixture. Refrigerate overnight. This is also a good salad to take to a potluck or family picnic.
