Ruth Mott’s Recipe CollectionEasy, One-Bowl Oatmeal Cookies

From Ruth Mott’s recipe collection, try your hand at these scrumptious oatmeal cookies. Don’t forget to pair with apple juice!

Ingredients

2 cups flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 cup brown sugar
1 cup granulated sugar
1 cup shortening
2 cups chopped apples
2 eggs
2 tsp. vanilla
3 cups rolled oats

 

To Make

  1. Sift together flour, baking powder, salt and baking soda. Set aside.
  2. In a large mixing bowl, blend both sugars and shortening. Add in eggs and vanilla.
  3. Combine both mixtures.
  4. Fold in rolled oats.
  5. Place mixture by spoonfuls on greased cookie sheet. Bake 15 minutes in a 350-degree oven.
