Sweet & Easy!Grilled Fruit Kabobs

As the weather heats up, we’re all about making mealtime easier. The dessert should be just as easy to make and grilled fruit kabobs are a perfect option to finish off a backyard BBQ or summer party!

With so many fresh fruits now in season, Michigan is one of the best places to live. This time of year, some fruit kabobs quickly seared on the grill is just the thing to end a light meal or to serve as an appetizer that will delight everyone.

I love to think of different combinations – one favorite is strawberries, bananas and pineapple – but you can also grill watermelon, peaches, mangos, apples, cantaloupe, kiwi, honeydew, blueberries, blackberries … the combinations are nearly endless!

To make things even easier, you can prep your fruit selections the day before you plan to grill them. Cut fruit into similar bite-sized pieces or use a melon-baller. I cut things like strawberries in half, but most other berries and grapes can be left whole. Soak apple slices in some lemon water if you are prepping them a day ahead.

A couple of minutes on the grill getting lightly charred will intensify fruit flavors and caramelize the natural sugars to create super-sweetness.

TO MAKE

To prevent burning, soak wooden skewers in water for several hours or overnight (30 minutes minimum). Or, opt for the reusable stainless steel type.

Start with a clean grill and get the heat up to 450°– you want a nice, light char. When hot, spray grates lightly with vegetable oil cooking spray.

Place assembled skewers directly on the grill. Cook for 2-3 minutes, searing each side and rotating to get the grill marks and crispy, caramelized bits. I recommend keeping an eye on them!

When you pull the kabobs off the grill, you can drizzle with honey and sprinkle coconut flakes, or make this easy and tangy dip to take your dessert over the top!

FRUIT DIP

  • 1 cup Greek yogurt
  • 1/4 cup marshmallow fluff
  • 1/4 brick (or 2 oz) cream cheese at room temp
  • 1 Tbsp lime juice

Beat all ingredients together and serve with fruit kabobs.
