This Valentine’s Day, surprise your sweetheart with these easy, homemade peanut butter cups! With just four ingredients, the maple-sweetened filling is a bit healthier than the traditional Halloween fave, as is the rich, dark chocolate coating. You can go with the darkest chocolate you can find. They’re so good, you’re sure to get a little “sugar” in return!
INGREDIENTS
Filling
▸ ½ cup smooth, natural, unsalted peanut butter
▸ 2 Tbsp maple syrup
▸ ¼ – ⅓ cup fine almond flour
▸ ⅛ tsp salt
Coating
▸ 7 oz chocolate (60-70% cocoa)
▸ 2 tsp coconut oil
TO MAKE
Line a cupcake pan with paper liners; you can also stand them up on a baking sheet.
For the filling, combine all ingredients to form a stiff paste. If it is too loose, add more almond flour.
Refrigerate for about 15 minutes until it is solid enough to shape.
Roll heaped teaspoons of the mixture into smooth balls then flatten them in your hands and shape into little discs that are slightly smaller than the bottom of your paper liners.
Over a double boiler or in the microwave, melt together dark chocolate and coconut oil until smooth.
Spoon about a teaspoon of the melted chocolate into each liner, spreading it to cover the bottom and pushing it slightly up the sides to form an edge.
Place a peanut butter disc into each cup and gently press down so that some chocolate comes up the sides.
Spoon more chocolate over top to cover evenly and smooth it with the back of the spoon.
Sprinkle with sea salt (if desired) and refrigerate until set.
These irresistible treats will keep at room temp for up to two weeks, and up to a month in the fridge.
