Time to Pack a Picnic!

DISH-5536Hopefully, you have taken a moment to do some relaxing outdoors and enjoy the spring breeze. The month of June, when Michigan’s temperamental weather is at its most gentle, is perfect for outdoor activity. Making time for a picnic is essential for maximum appreciation of this beautiful season!

The best thing about picnics is that they only require two things: agreeable weather and food. Good company is a bonus, but a solitary outing can be just as enjoyable. After you choose a destination, choosing food that takes minimal effort to prepare and serve will get you outside and give you more time to enjoy the elements.

Our suggestion for a simple, on-the-go lunch that is perfect for any outing is a prosciutto, arugula and goat cheese sandwich, spread with your favorite jam and served with freshly squeezed, rosemary-lavender lemonade to keep you deliciously hydrated. This sandwich is portable and can be easily assembled on-site. Of course, you can find the freshest produce and variety of cheeses at The Local Grocer. Pro Tip: Spreading freshly and gently cut peppermint sprigs around the picnic blanket perimeter is a natural way to slow down the ant traffic.

Sparkling Rosemary-Lavender Lemonade

  • 1 cup sugar
  • 4 cups cold water, divided
  • 1 tablespoon dried lavender flowers
  • 1 rosemary sprig, leaves removed and roughly chopped
  • 1 cup freshly squeezed lemon juice (about 8 whole lemons)
  • 2 cups sparkling water
  • 1-3 cups ice
  • Additional rosemary sprigs and lemon slices for garnish

To Make

Combine 1 cup water and 1 cup sugar in a saucepan and heat until simmering. Remove from heat, add lavender and rosemary. Steep until cool, about 1 hour. Pour the liquid into a pitcher. Add lemon juice and remaining 3 cups water. Stir to combine. Add the sparkling water and desired ice, keeping in mind that ice will further dilute the drink. Garnish servings with additional rosemary sprig and lemon slices.
